Tangia - What is it?

Tangia is a dish from the Marrakech region. It is a dish of meat prepared in a special clay pot whose shape resembles that of an amphora.

This clay pot, like the yard, is called Tangia. According to its regional origin, it is also known as Tanjia Marakkchia.

Ingredients:

The main ingredient is meat. Most recipes use lamb. Sometimes, beef too. Also shallots and garlic. Salt lemons should not be missed either. Cumin, saffron and fresh parsley are spiced with cumin. Another element of incomparable taste is provided by Smen.

For the Tanjia Marrakechia

2 kg: calf
12 pcs: garlic clove
1 piece: inlaid with salted lemon
2 teaspoons: cumin
1 teaspoon of pepper
1 teaspoon: salted butter
14 pieces: saffron thread
250 ml: water
50 ml: olive oil

For the vegetable salad

250 gr: zucchini
250 gr: Fresh eggplants
250 gr: carrot
250 gr: beans
250 gr: Salt olives
250 gr: cauliflower
6 pcs: garlic clove
1 piece: lemon
1 teaspoon of salt
1 teaspoon of pepper
1 teaspoon of cumin
5 tablespoons: olive oil
0.25 frets: parsley
0.25 fret: coriander

All ingredients are simmered over low heat for several hours in a tangia jar until the meat is tender and juicy. In Morocco, this is done traditionally overnight, with the cooking vessel covered with hot charcoal.

What is suitable as a side dish?
Since the dish itself is made up mainly of meat, it is advisable to serve matching accompaniments. As almost always in Morocco, bread is served. Couscous, vegetables or potatoes can also be used as a side dish for the meat dish.

Buy Tangia - Where are the clay pots?
You will find what you are looking for in Marrakech itself. In this country, we have not yet seen terracotta vases in the shape of an amphora.

If you want to cook Tangia without having the right container, you can just cook a casserole or tajine. The pot of Güvec used in Turkey can also serve as a substitute.

Do not be confused with tajine!
Although the Moroccan tajine also refers to the dish as well as the pressure cooker in which it is cooked, they do not have much in common.
